It’s time to get back to normalcy. Summer is not the time to slack when it comes to dinner time. I haven’t been very organized these past two weeks and our meal times have totally become chaos. I mean so bad that we had chicken nuggets not once, but twice last week. Since I banished them from our home you can imagine my disdain.
So here’s what’s on the menu this week. Keep in mind we are mostly dairy free.
MONDAY – Insert Sunday dinner here. Roasted Turkey Breast, Corn Casserole and a Baked Garnett Yam.
TUESDAY – Spaghetti Night! I made a new batch of homemade sauce from Theresa Kingman’s Dairy Free Cookbook and the kids loved it. It’s in the freezer and ready to go!
Lower Carb Meal Option: Meatballs and Salad
WEDNESDAY – Marinated Balsamic Chicken and Roasted Carrots and Green Beans. I already marinated chicken breasts in balsamic dressing and put in the freezer. I’ll add rice or couscous on the side for the girls.
THURSDAY – Caramelized Peach Salad with Shrimp.
FRIDAY – Pizza Night. And then a movie with popcorn and m&m’s afterwards!
SATURDAY – We are having company so just a cookout with burgers and chicken, watermelon and salad.
SUNDAY – My mom’s famous Chicken & Rice.
MUFFIN MONDAY – The girls have requested banana again, so here’s my favorite recipe. But I sub whole grain flour, walnuts, and 1 tbsp flaxseed for an extra health booster!
